The 2004 Cabernet Sauvignon “Bin 707” is one of the Penfolds’ flagship wines. It was aged for 15 months in 100% new American oak. Opaque purple/black, it exhibits a classic Cabernet nose of cedar, tobacco, spice box, black currant, and blackberry liqueur. Medium-bodied (13.5% alcohol) but dense and concentrated, with tons of black fruit flavor, the wine is tightly knit, structured, beautifully balanced, and very promising. It needs a minimum of 10-12 years of cellaring and should provide pleasure through 2040. October 2007 Drink: 2017-2040 WA 95

The Bin 707 Cabernet Sauvignon was aged for 16 months in new American oak hogsheads. A glass-coating opaque purple, it displays aromas of pain grille, pencil lead, mulberry, spice box, and black currant. Medium to full-bodied and seriously structured, it has the fruit to complement its frame. On the palate, espresso and chocolate make an appearance along with layers of savory black fruits. Dense and exceptionally lengthy it will continue to unwind for another 6-8 years and drink well from 2015 to 2031. December 2009 WA 94
