The star of this trio is the 2007 Cabernet Sauvignon (907 cases). Beautiful aromas of blueberry liqueur, blackberries, camphor, incense and acacia flowers is followed by a well-textured, full-bodied, stunningly opulent, voluptuous wine with plenty of structure lurking beneath the surface. Super-pure and intense, it is the strongest wine produced by Byrant over the last 4-5 years. It needs 3-4 years of cellaring and should keep for three decades. December 2010 WA 97+

The same could be said for the 2004 IX Estate Proprietary Red, a blend of 59% Cabernet Sauvignon, 22% Merlot, 13% Cabernet Franc and the rest Petit Verdot. Deep purple to the rim with sweet blackberry, creosote, camphor, forest floor and fruitcake notes, sweet tannin and a layered mouthfeel, this wine builds incrementally offering up power, but also elegance.
