Just beginning to come around and strut its enormous potential, this wine at age 15 has been evolving like a glacier. The wine has an inky, opaque, plum/purple color and a stunningly rich nose of mulberries, bramble berries, blackberries, licorice and incense as well as touches of toast and graphite. Fabulously concentrated and full-bodied, with a multidimensional mouthfeel, this profound Pavie is in mid-adolescence. It should evolve and continue to drink well for at least another 30-40 years. The wine has a stunning nose of roasted herbs, grilled meats, charcoal, blackberry and blackcurrant fruit, with some oak still present. Dense, full-bodied and very succulent and lush, this wine seems to be in late adolescence, ready to enter a relatively mature stage. There is always a suspicion because of the extreme heat in July and August that these wines will crack up very quickly, and certainly that will always be a worry, but this one looks set for at least another 10-15 years of drinkability. A real sleeper effort from the Perse family, the 2004 Pavie has a dense, bluish purple color and a wonderful, sweet kiss of blackberry, licorice, spice box and roasted herbs. The wine is rich, deep, full-bodied and absolutely remarkable for the vintage. This is certainly a candidate for one of the wines of the year and seems still relatively youthful and promising. Dense, opaque purple to the rim, with a gorgeously promising nose of blackberries, cassis, graphite and cedar wood just beginning to emerge, it tastes more like a three-year-old than wine that is already a decade old. This beauty is intense and full-bodied, with magnificent concentration, a majestic mouth-feel and a total seamless integration of tannin, wood, alcohol, etc. Beautifully rich, full and multidimensional, this is a tour de force in winemaking and certainly one of the top dozen or so 2005 Bordeaux. Forget it for another 3-5 years and drink it over the following 50-100 years! August 2015 WA 100
